Nobu Manila Celebrates Nobu Global’s 30th Anniversary: Savor Past, Present, & Future

Nobu Manila, one of the 57 global locations of the world-renowned Nobu Restaurant, joins in celebrating Nobu’s 30th anniversary. This milestone honors Chef Nobu Matsuhisa’s innovative culinary journey, combining Japanese cuisine with Peruvian influences, and showcases his visionary approach to dining.

With Chef Nobu’s culinary vision, a creative play of flavors is encapsulated in the Lobster Ceviche Butter Lettuce — one of Nobu’s 30th Anniversary Bar Bites.

Each featured dish, from new creations to signature classics, reflects Chef Nobu’s personal story—from the early days of the Nobu brand to its future vision. Known for his philosophy of “kokoro,” meaning “from the heart,” the anniversary menu embodies Nobu’s principles of humility, gratitude, and hospitality.

Omakase Tasting Menu

In celebration, Nobu presents a special five-course omakase dinner menu, available globally from October 7 to 13, highlighting 30 years of culinary mastery. Priced at P8,871.43 net per person, the tasting menu begins with a four-way starter: Toro Tartar, Salmon Tataki in Karashi Su Miso, White Fish Tiradito, and Yellowtail Jalapeño. This is followed by a selection of sushi: Tuna Nigiri, White Fish with Maldon Salt and Lemon, Scallops with Dry Miso, and a Nori Taco with Caviar. Guests can then enjoy Black Cod Butter Lettuce and Crab Amazu Ponzu, followed by Japanese Beef Anticucho with hijiki seaweed, grilled tomato, and oshinko. The meal concludes with a dessert trio of strawberry cheesecake, milk chocolate and sesame cream, and mochido.

The exclusive menu offers a taste of Nobu’s signature dressings and sauces, defining the restaurant’s New Style cuisine. Diners can enjoy this special meal in the stunning indoor space, which features two private dining rooms and five outdoor floating cabanas surrounded by water features and lush gardens, perfect for an alfresco dining experience.

Bar Bites

For a more casual experience, Nobu Manila is also offering “Nobu’s Anniversary Bar Bites” during the same period. The menu includes: Spicy Miso Chips (P550), Nobu Nori Tacos (P3,100), Lobster Ceviche Butter Lettuce (P1,250), Seafood Harumaki Caviar (P1,200), Crispy Rice Spicy Tuna (P760), Wagyu Dumplings (P1,000), Chilean Sea Bass Umami Butter Lettuce (P1,000), and Tuna Asparagus Cut Roll (P430). Guests can enjoy these bites in the bar, cabanas, or main dining area, paired with the special anniversary cocktail, Matsuhisa Martini (P560), or their preferred drink. Prices are inclusive of VAT, subject to local tax and service charge.

The mouth-watering Japanese Beef Anticucho highlights Nobu’s distinctive and subtle New Style Japanese flavors.

Adding to the celebratory atmosphere, Nobu Manila’s “Sounds of the City” music entertainment features live DJ sets every Thursday to Saturday from 7 to 10 PM, creating a vibrant ambiance for diners.

In-room Dining

Nobu Hotel guests can also indulge in Nobu’s New Style Japanese cuisine from the comfort of their rooms. The special Four-Way Starter selection, featuring Toro Tartar, Salmon Tataki in Karashi Su Miso, White Fish Tiradito, and Yellowtail Jalapeño, is available for in-room dining.

The eye-catching Nobu Nori Tacos are built in seaweed shells, generously stuffed with salmon, tuna, lobster, and avocado topped with caviar.
